Blackberry Mojitos!! Why did I have to go all fruity on you and add blackberries to a perfectly acceptable cocktail? Well my friends, blackberries and lime go together incredibly well (as some of you might remember from the these Blackberry Lime Cupcakes).
Back to the mojitos however. This summery cocktail is a part of another #FBCConnectingOverCocktails. Thanks to everyone in the group who participated with some killer summer sips. I can’t wait to check out everyone’s posts.
How to make an easy mojito recipe:
Get a glass ready! No need to dirty more dishes than necessary. In the glass place mint, lime, and sugar. “Muddle” until sugar has dissolved and mint has soften. The aroma from the glass should be minty and delicious. Simply top the muddled ingredients with white rum, club soda and lots of ice.
Mojito are very adaptable. Don’t like blackberries? Skip them all together for a classic lime and mint focused mojito or what any berry or fruit that works with lime and mint.
Some of my favourites are blackberry (obviously), blueberry, strawberry, watermelon, peach, pomegranate, mango, etc. There are a lot of opportunities to personalize this easy cocktail.

Ingredients
- 1/2 cup blackberries
- 2 tsp fine (berry) sugar
- 4 medium fresh mint leaves
- 1/4 cup lime juice
- 3 oz. white rum
- 1/2 cup club soda
Instructions

Muddle* blackberries, sugar, and mint together, breaking down the blackberries and dissolving the sugar.

Add lime juice and rum to blackberry mixture, stirring to combine. Divide between two glasses and top with club soda.

Top with lots of ice (crushed is usually more traditional in a mojito, but ice is ice!).
