BBQ Ranch Chicken Skewers


The days leading up to any kind of trip usually leave me scrambling? Anyone else? I don't want to run to the grocery store, I don't want to come home to liquified produce in the fridge, and I usually end up half-assing some kind of meal from whatever I can find in the fridge/freezer. This meal is actually perfect for those pre-vacation days, and it could even be perfect for the day or day after you come home from vacation is you plan ahead. It relies solely on pantry staples, and they don't require that much babysitting once they're on the grill. It's the kind of minimal prep and minimal cooking time I love this time of year, and I love it even more when we're leaving for a camping trip and my kitchen is in 8 stages of disarray.

This is an easy dinner or appetizer, and you could easily include these as part of your meal prep plans and add the chicken to a salad for your mid-week lunch. As my daughter likes to say, easy peasy lemon squeezy.

BBQ Ranch Chicken Bites
Barely adapted from The Kitchn

2/3 c. ranch dressing (store-bought or homemade)*
1/3 c. BBQ sauce (store-bought or homemade)*
2 lb. boneless, skinless chicken breasts, cut into 1 or 2-in. pieces
Salt and pepper, to taste
1 T. chopped fresh chives

In a small bowl (I used my measuring cup,) mix the ranch dressing and BBQ sauce. Pour 1/2 c. into a small bowl and set aside. Season the chicken with salt and pepper, and place in a large bowl. Pour the remaining ranch-BBQ mix over the top of the chicken and stir to coat. Marinate the chicken at room temperature for 30 minutes, or cover and marinate in the fridge for up to 24 hours.

If using wooden skewers, soak for 15-20 minutes. Heat the grill to medium-high. While the grill is warming up, thread the chicken pieces on to the skewers (I had around 7 on each stick.)

Place the skewers on the grill and cover. Cook about 3-4 minutes, then flip and cook an additional 3-4 minutes, until cooked through. If they aren't quite ready, continue cooking and flipping after 3-4 minutes. Top with chives, and serve with reserved ranch-BBQ sauce.

*I used store-bought, but homemade ingredients would be great here. In my experience, both homemade ranch and BBQ sauce tend to be thinner, so you may need to eyeball it and up the amount of each.
